For some reason this recipe gave me enough batter to make two cakes the same height...BUT
This recipe (is suppose) to make 8-10 servings.
INGREDIENTS:
- 350g dark chocolate, coarsely chopped - I used a block, so I just broke it up in to a few pieces
- 250g (1 cup) unsalted butter
- 1 teaspoon instant coffee granules
- 10 large eggs, separated
- ¼ cup (60ml) milk
- 1½ (300g) white sugar
- OPTIONAL: ½ cup (125ml) whipped cream to decorate
METHOD:
- Preheat oven to 150˚C
- Butter 10" (25cm) circular spring form pan
- Melt the chocolate, butter and coffee in a bowl over a saucepan of boiling water - be sure to stir regularly to prevent burning - once melted, set aside to cool
- Beat the egg yolks and milk in a bowl with an electric mixer on high until pale and thick
- Fold egg yolk mixture into chocolate mixture
- Beat the egg whites and sugar with an electric mixer on high until stiff peaks form
- Fold egg white mixture into chocolate mixture
- Spoon mixture in to prepared pan
- Bake until firm in the centre, approximately 45mins
- VOILA! You've got yourself a mocha flourless cake! Serve with a dollop of whipped cream (or vanilla custard) and you're set :)
