- 125g butter, softened
- ⅔ cup brown sugar
- ¼ cup maple syrup
- 1 egg, lightly beaten
- 2½ cups plain flour
- ½ teaspoon bicarbonate soda
- 1 tablespoon ground ginger
- 2 teaspoon ground cinnamon
- 1 cup white chocolate melts
METHOD:
- Beat butter and sugar until light and fluffy with an electric mixer or food processor
- Add maple syrup and egg, beat to combine
- Sift flour, bicarbonate soda, ginger and cinnamon over butter mixture
- With a wooden spoon, stir until just combined and a soft dough forms
- Place dough on lightly floured surface and knead gently until smooth
- Shape into disc and wrap in plastic wrap, place in fridge for 1 hour or until firm
- Preheat oven to 180˚C
- Roll dough beween 2 sheets of baking paper until about 5mm thick
- Cut shapes out of dough with cutters, I used a gingerbread man cutter
- Re-roll dough scraps and continue to cut until dough is used up
- Place shapes/men on baking trays lined with baking paper about 2cm apart
- Bake trays separately for 20 to 25 minutes, or until firm to touch
- Stand tray to cool for 5 minutes
- Place melts in a heatproof/microwave safe bowl and microwave enough to melt the chocolate melts. Stir the melts until smooth consistency and decorate your gingerbread men with a skewer or pipping bag
- VOILA! Tasty ginger treats are ready to be enjoyed!!
